Paleo Challenge Update
Well it’s been seven days and, as far as I can tell, everyone seems to be doing well. Everyone (including me) did the usual griping and complaining the first few days, but now things seem to be settling out a bit more. Thirty eight more days to go. I am actually starting to have fun with seeing how creative I can be with my food. I don’t know about you guys but I really like to eat. I personally do not think you have to go through a challenge like this eating bland, no taste and/ or the same thing food until it is over. This would seem to be a hard thing to do, but trust me, if I can do this with my busy schedule, anyone can do this.
You definitely need to plan your meals at least 3 to 4 days ahead. I baked a crap load of Chicken Breast Sunday night. I seasoned them with a little bit of olive oil, lemon, garlic, no salt seasoning/ spice mixture from Costco, and some pepper.
After I baked them at 300 degrees f for about an hour and a half. They came out very tender and juicy. I cooled them off and stuck them in a plastic container and into the refrigerator.
I sliced one up for breakfast and will also have one for lunch, today.
I sauteed onions and the sliced chicken breast in a pan with a touch of olive oil. I further seasoned it with what I am now calling “my standard” Paleo Seasonings. I plated it with an avocado, hard boiled eggs, the “no salt” Red Salsa that I made last night and two oranges. It was awesome.
I will post the Paleo Red Hot Salsa (no salt) and Paleo Lengua Lettuce Tacos tomorrow.
